Bangus Asian Salad in Lettuce Cups

Ingredients

500g Sarangani Bay Milk Fish Fillet (skin removed and chopped)

2 T cooking oil

1 t ginger, minced

1 t garlic, minced

2 T chopped onion

¼ cup diced carrots

¾ cup chopped water chestnuts or singkamas

¼ cup hoisin sauce

1 T oyster sauce

1 t sesame oil

1 head iceberg lettuce cups

Garnish:

50g bihon noodles

1 cup cooking oil

¼ cup chopped spring onion

Procedure

Saute in cooking oil ginger, garlic, onion, carrots and water chestnuts. Add bangus and cook for 2 minutes. Add hoisin and oyster sauce, cook for 1 minute. Lastly add sesame oil and remove from heat. Transfer onto a platter and garnish with crispy bihon noodles and spring onions. Serve with lettuce cups on the side.

To make garnish: Heat 1 cup of cooking oil. Instanty drop a handful of noodles into the hot oil. Immediately remove noodles as soon as it puffs. Drain from oil. Place on top of the cooked bangus.
