Smoked Bangus And Salted Duck Egg Salad

1-320g pack Sarangani Bay Smoked Bangus (skin removed & flaked)
1 cup cooked red rice
2 medium tomatoes, diced
2 salted duck egg, cubed
2 stalks cilantro
lettuce for garnish
1/4 cup cane vinegar
1/2 cup olive oil
2 tbsp chopped shallots
1 tsp patis
1/8 tsp pepper
2 tsp sugar
Mix all ingredients of the dressing. Place in an empty jar and shake well. Set aside.
In a bowl combine bangus, rice, tomatoes and salted egg. Toss gently. Place in a lettuce lined serving platter or divide into 4 salad bowls. Drizzle with the dressing. Top with chopped cilantro.
Serve room temperature or chilled if desired.
