Fresh and Hot off the Kitchen: Spicy Asian Stir-Fried Noodles with Milkfish

Spicy Asian Stir-Fried Noodles with Milkfish
300g Sarangani Bay Milkfish Fillet, diced
½ cup corn oil
2 tsp garlic, minced
½ cup onion, finely chopped
2 tbsp chili garlic sauce
¼ cup peanut butter
½ cup oyster sauce
1 cup water
1 tbsp sugar
1 tsp salt
½ cup unsalted peanuts
350g cooked spaghetti
2 tsp sesame oil
1. Season bangus chunks with salt and pepper.
2. Heat ¼ cup of oil in a frying pan. Fry bangus until lightly brown. Drain and set aside.
3. Heat remaining oil in a large saute pan. Add garlic, onion, chili garlic sauce, peanut butter, oyster sauce, and water. Allow to simmer for 1 minute then add bangus, sugar, salt, and peanuts.
4. Toss pasta into the sauce. Drizzle with sesame oil and arrange on a plate and top with coriander leaves. Serve hot.
