Have A Taste Of Italy With This Simple But Elegant Appetizer

Bruschetta is a popular Italian appetizer consisting of grilled bread rubbed with garlic and is usually topped with olive oil and salt. For this recipe, this popular Italian dish will be given a Filipino spin by adding bangus.

Bangus will give the bruschetta recipe a smoky flavor and make the guests crave for more. This is a perfect start of a sumptuous dinner for the family.

Bruschetta With Smoked Fish

Ingredients

1-320g pack Sarangani Bay Smoked Bangus (skin removed & flaked)

1 loaf French bread, sliced diagonally into 14 slices

1 tbsp garlic crushed infused in

¼ cup olive oil

4 medium ripe tomatoes, deseeded and diced

¼ c up chopped fresh basil

¼ cup sliced black olives

1 tsp salt

2 tsp calamansi or lemon juice

¼ cup olive oil

½ cup feta cheese or kesong puti (Optional)

Procedure

Brush French bread slices with garlic infused oil. Toast for 5 minutes in a toaster oven till crisp.

In a bowl, mix together, tomatoes, chopped basil, black olives and smoked bangus. Add salt,

calamansi juice, olive oil and cheese. Let it stand for 20 minutes to allow flavors to blend.

Top each slice of French bread with the smoked bangus mixture. Serve immediately.
