Fire up your weekend dinner with this Spicy Tamarind Glaze Pompano

There’s nothing more exciting than preparing a new special dish for the whole family. This Spicy Tamarind Glaze Pompano has just the right balance of heat and spicy-sourness that everyone looks for in their fish dish.

Spicy Tamarind Glaze Pompano

Ingredients

1 whole                        Sarangani Bay Pompano, cleaned and degutted

2 tsp                            salt

1 cup                           cooking oil

Sauce:

2 tbsp                          cooking oil

½ cup                          red pimiento pepper. sliced

4 -5 pcs                       red chilies, sliced

1 tbsp                          garlic, minced

2 stalks                        cilantro stems and roots sliced ( save leaves for garnish)

¼ cup                          tamarind paste

½ cup                          water

½ cup                          light brown sugar

1 tbsp                          fish sauce

3                                  kaffir limes leaves, cut into strips

 Procedure

  1. Rub fish well with salt. Heat oil in a pan. Score fish. Fry fish on both sides. Set aside to allow oil to drain.
  2. Heat oil in a saucepan. Sauté pimiento, red chili peppers and garlic until fragrant. Add cilantro, tamarind paste and water, put to a boil. Add sugar and fish sauce. When slightly thick kaffir lime leaves. Remove from heat, Strain sauce . Pour sauce over fried fish.
  3. Garnish with cilantro leaves and extra red chilies. Serve.

Makes 4-6 servings.
