Pinaputok Na Baby Bangus

As the cook, you want to give your family an exciting dish to bond over at the dinner table. Surprise them with a steaming hot pinaputok na Sarangani Bay Baby Bangus at your next family get-together. Wrapped and cooked in banana leaves, the ingredients like tomato, ginger, and cilantro–all stuffed in the bangus–create a nice blend of flavours just right for our Filipino taste.

Pinaputok Na Baby Bangus

Ingredients

5 pcs Sarangani Bay Baby Bangus, Unseasoned, scales removed

2 tsp Calamansi juice

1 tbsp fish sauce

1 cup chopped tomatoes

½ cup chopped onion

1 tbsp sliced ginger

¼ cup chopped cilantro

2 sheets of banana leaves or aluminum foil

1 cup cooking oil

Procedure

1. Wash the bangus well and dry with kitchen towel. After washing, in a clean bowl, marinate bangus in calamansi juice and fish sauce for 15 minutes. Split the bangus in two.

2. Combine tomatoes, onions, ginger, and cilantro. Divide mixture into half and spread over the split bangus. Close and wrap in banana leaves or aluminum foil. Secure with toothpicks (if using foil wrap, seal edges tightly)

3. Heat cooking oil in a frying pan. Gently slide the wrapped bangus into hot oil. Fry for 10 minutes on both sides. To serve, unwrap immediately while hot.
