Smoked Bangus Quesadilla With Tomato Salsa

Ingredients
1-420g Sarangani Bay Baby Split Marinated Milk Fish (skin removed and flaked)
½ cup cornstarch
2 tbsp chili powder
1 medium red onion (chopped)
1 tbsp lime juice
2 long green chilies (deseeded and chopped)
2 stalks of cilantro (chopped)
1 tsp salt
2 cups cooking oil
10 flour tortillas
200g Monterey jack cheese (grated)
4 large ripe tomatoes (chopped)
2 medium green bell pepper (chopped)
Procedure
Fill tortillas on one side with cheese, smoked fish, green peppers and sprinkle with chili powder. Fold. Do the same with the remaining tortillas. Set aside.
In a clean bowl, mix together tomatoes, onion, lime juice, green chilies, cilantro and salt. Store in a chiller .
Heat a non stick pan. Drizzle with few drops of cooking oil.
Cook prepared tortilla into a non- stick pan. Lightly brown both sides until cheese melts.
Serve warm with prepared salsa on the side.
