Smoked Bangus Pasta Insalata

Ingredients

1-420g pack Sarangani Bay Smoked Bangus (skin removed & flaked)

2 cups Cooked penne pasta

1 cup Green beans (blanched and cut into 1 inch length)

2 large tomatoes (sliced)

1/4 cup Black olives (sliced)

2 tbsp capers

2 Eggs (hard cooked, shelled and sliced)

1/3 cup Olive oil

2 tbsp Lemon juice

1 tbsp White wine vinegar

2 tsp garlic (minced)

1 tbsp Dijon mustard

2 tbsp Fresh basil leaves (chopped)

1 tsp salt

1/4 tsp pepper

Procedure

Prepare dressing, whisk together lemon juice, vinegar, garlic, mustard, salt and pepper. Add olive oil little at a time while whisking continuously until thick. Add basil leaves. Set aside.

Arrange in a salad bowl, pasta, green beans, tomatoes, olives, capers and smoked fish.

Drizzle with prepared dressing and toss gently.

Garnish with sliced eggs and basil leaves.

Serve.
