Smoked Fish, Asparagus and Poached Egg Breakfast Toast 

Ingredients

2 cups Sarangani Bay Smoked Deboned Milkfish, skin removed and flaked

3 tablespoons cooking oil

4 eggs

12 green asparagus spears, blanched

4 slices thick cut white bread, toasted

¼ cup softened butter

½ teaspoon paprika

1 tablespoon chopped parsley

Procedure

  1. Heat cooking oil in a pan, lightly fry smoked fish flakes. Set aside. Poach eggs. Lightly butter toasted white bread.
  2. To assemble: Divide the 12 asparagus spears among 4 bread slices. Top with ¼ cup each of smoked fish.
  3. Add poached egg on top. Sprinkle with paprika and chopped parsley.
  4. Serve immediately.
