Smoked Bangus Stuffed Baked Potato

Unconventional? Maybe. But trust us—the flavors bursting in this bangus recipe are just heavenly good.

Ingredients

1-320g pack Sarangani Bay Smoked Bangus (skin removed & flaked)

4 large Potatoes (Baked or Boiled skin –on)

½ cup sour cream

1 cup sharp cheddar cheese

¼ cup chopped spring onion

Picante Sauce:

1 tbsp Cooking oil

1 tbsp mince garlic

2 tbsp Chopped onion

1 tsp oregano flakes

1 ½ cup canned crushed tomatoes

2 tbsp hot sauce

1 tsp salt

¼ tsp pepper

Procedure

Cut the potatoes in half. Scoop out the inside of the potatoes, mash and stir in sour cream. Place in a medium bowl. Set the potato skins aside.

For picante sauce: Saute in oil garlic, onion, oregano. Add crushed tomatoes and hot sauce. Season with salt and pepper. Cook until thick about 20 mins over medium heat.

Fill potatoes with smoked fish and spoon picante sauce over fish. Place some cheese and cover with a mound of mashed potato. Finally top with more cheese and sprinkle with chopped spring onion.

Place on a baking sheet and broil in oven until cheese melts about 10 mins.

Serve with extra sour cream.
