Bangus Belly In Eggplant Parcels
Ingredients
1-410g pack Sarangani Bay Bangus Belly(cut into 6 square pieces)
4 long pcs eggplant (Sliced length-wise)
120 g Mozzarella cheese (Cut into 6 square size)
3 medium tomatoes (sliced)
12 Basil leaves
1 tsp Salt
1/2 tsp pepper
2 tbsp Olive oil
1 tbsp garlic (minced)
1/2 cup onion (chopped)
1 tsp Dried oregano
1 tbsp sugar
1 tsp salt
1/4 tsp pepper
1/4 cup Grated parmesan cheese
Procedure
Season fish with salt and pepper.
Cook eggplants in salted water until tender. Drain and pat dry.
Take 2 slices of eggplant and form a cross. Place fish at the center. Top with sliced tomato, mozzarella and basil leaf. Repeat to make six parcels.
Place in an oven proof dish
Prepare sauce by heating olive oil in a pan. Saute garlic and onions.
Add tomato sauce, dried oregano and sugar. Cook for 3 mins. Season with salt & pepper.
Pour sauce over eggplants. Top with parmesan cheese
Bake in a pre-heated oven at 350 F for 30 mins
Serve hot.
